How can you tell a male from a female?
i know its something to do with the feathers underneath, but im not too sure what to look for.

Depends on the mutation. Your thinking of spots on the underside of the wing feathers - female. Males have some, but not as many. Also, barring on the tail feathers can show a female too. Princess

Chewing toys - I've had to replace the mouse and an electric lamp as they have chewed the cords!!!!
Raffia, tied in a bundle, matchsticks, popsticks, wooden pegs, anything they can chew. (you can buy matchsticks from the craft shop, or just chop off the sulphur end. If you pop them in an empty matchbox, your tiel might open the box to get to them - my Woosie does!)

George discovered the big mirror in my front room for the first time today (heaven only knows how he missed it before) and he spent such a long time chirruping to himself and generally loving himself!! hehe

With a pied tiel there is no visual way of sexing them. I sexed Barnslee by a sex indicator to find out she was female if you remember. The only way other than that is DNA or by their mannerisms. Males are gobby hehe and females arent, plus they tend to be more gentle than males.
I find out that paper toys go down well with Noo Noo he loves to shred things like that. Also ropey things too.
